Hamgyong Province is the high mountainous area. From olden times, the people in the region have grown potato, oat, millet, bean, etc. The region is on the coast of East Sea of Korea and abounds in plenty of fishes such as myongthae (Alaska Pollack), codfish, flatfish and squid.
So, there are many foods of potato, oat, millet, bean and edible herbs and different kinds of fish dishes in the region.
Generally, those in the region like hot foods.
The dishes in the region are characterized by hot taste and perilla smell.
In particular, there are dozens of potato foods in the region. Among them Hamhung starch noodle is very famous.
Hamhung starch noodle is distinguished by thin and stringy strips and hot taste.
Also famous are myongthae (Alaska Pollack) dishes such as fermented myongthae, myongthae peppery soup, boiled rice in myongthae, salted roe of myongthae and salted myongthae tripe.
Those in the region also like fermented flatfish and hard-finned sandfish and steamed crabs.
Mustard-kimchi is a special dish among the vegetable and wild herb dishes loved by the people in the Hamgyong Province.
